Recipe: Mediterranean Pasta
This pasta dish is one of our favorites providing unique and different tastes.
1 package hot lean turkey sausage (Jennie-O)
1 tsp olive oil (Star)
1/4 cup sun dried tomatoes (Sun Valley)
1 4oz. can of sliced olives (Sunny Select) – drain
1 12 oz. can of artichoke hearts (Maria) – drain
1/2 tsp basil (McCormick)
Dash salt (Morton) and pepper (McCormick)
Vegetable spiral rice pasta (Tinkyada)
Sauté the whole sausage in olive oil for 3-4 minutes on high. When the sausages are golden brown on the outside, remove and cut at an angle into bit size pieces. Return the cut sausages back to the pan and continue to cook for 10-15 minutes on medium low heat.
Add sun dried tomatoes, sliced olives, artichoke hearts and spices to sausage. Thoroughly mix and cook for 5 minutes until completely heated.
While sausage is cooking, prepare pasta according to the package instructions.
Recipe yields 8-10 servings
Tip:
- Cooking the sausage whole first makes it easier to cut and the sausage stays in the casing.
- Get the artichoke hearts that aren’t in oil. They taste great and are lower in calories.
